Hello Friends!

I hope you had a wonderful Labor Day weekend! We enjoyed our last summer weekend at the lake and now our kids are back to school today.  This week kicks off our Back to School series.

This week I will share with you easy, delicious family recipes, healthy after school snacks, and 10 minute organizing projects that will make your life run so much  smoother as the school year begins.

First up in our series is a delicious, healthy after school snack or breakfast: Pumpkin Bread! This recipe contains the magic ingredient for the best Pumpkin Bread you will ever taste… Coconut Oil!

There is a batch of this amazing bread baking in our oven right now for a yummy after school snack for my kiddos.

Pumpkin Bread

The best Pumpkin Bread that you will ever taste! With a secret ingredient... coconut oil!

Course Breakfast, Snack
Cook Time 45 minutes
Servings 8 servings


  • 3 cups Sugar
  • 1 cup Coconut Oil
  • 3 Eggs
  • 1 15 oz Can Pumpkin
  • 3 cups Flour
  • 2 tsp Pumpkin Pie Spice
  • 1 tsp Baking Soda
  • 1/2 tsp Baking Powder


  1. Preheat oven to 350 degrees. Grease 2 medium size loaf pans. Mix all ingredients together and divide equally into both pans. Bake for about 45 minutes until toothpick comes out clean.
